Issei Shin

Nestled in the mountains of Yamaguchi prefecture amid rice fields and bamboo forests, Issei Shin is hand-forged into existence one by one.

 
 

Recognizing that many western chefs and home cooks use the rocking method when chopping, we collaborated with the blacksmith to give birth to Issei Shin. The blade has an ample curve to aid in the rocking technique.

However, the end of the heel is straight, enabling the user to also use the up and down chopping method as well. The point at the tip is perfect for trimming meat, chicken and fish and other intricate cutting tasks. The wide girth of the blade makes scooping up your chopped vegetables or fruit and placing them in a pan or bowl effortless. Don’t forget to use your Issei Shin to slice tomatoes and bread too!
