Sohshin

Sohshin blades are forged on the beautiful island of Shikoku. It’s the smallest of the 4 large islands, located on the Pacific side of the largest island, Honshu. Shikoku is known for its hot springs, shrines and famous historical figures.

 
 

Sohshin was born in Koichi, Shikoku. Knives from this area are known as Tosa-bohcho (Tosa-knives). Tosa-bohcho are widely recognized within Japan for their outstanding craftsmanship.

Sohshin Blacksmith designed this knife especially for Japanese Knives Select. It has a pronounced curve to the edge making rock cutting an ease. The point at the top is perfect for slicing and trimming meats. The edge itself is Japanese high carbon steel, however it is clad, or sandwiched, between stainless steel. The handle is a type of cassia tree originating from India and Asia. This is a fantastic chefs knife that you will use for all kitchen tasks, even tomatoes and bread!
