You will learn what tools you’ll need to sharpen, how to hold, place and move a knife while sharpening, general procedures along with specific do's and don'ts, sharpening stones, the target “angle” and other useful tips and techniques.
This hands-on class is designed to help you start sharpening without having any previous sharpening experience.
Objectives:
Understand how sharpening works and how/what to do.
Be able to reestablish a sharp edge on a dull knife.

This class is taught by a Japanese master sharpener using Japanese techniques. You will learn what you’ll need to have for sharpening, as well as how to hold, place and move a knife while sharpening.
